Hot Wings

  • 1 pound split chicken wings
  • 2 tbsp. vegetable oil
  • 2 tbsp. chili-infused vinegar (see below)
  • 2 tbsp. beer
  • 1 tbsp. ketchup
  • 1 tbsp. Tabasco (or other hot sauce)
  • 1 tbsp. butter
  • 1 tsp. ground cumin
  • Salt, pepper

Add oil to an oven-safe saute pan/skillet on medium-high heat. Add wings to hot oil (skin side down, to start), sprinkle a little salt, pepper, and cumin, and fry until lightly golden brown. Add ketchup and hot sauce, and stir wings until evenly coated. Then move the pan to a 400 degree oven, and roast for 15 minutes.

Remove the pan from the oven, and place back on a burner at high heat. Pour the vinegar over the wings, and stir them a little to get them coated. Then move the wings to a serving dish. Deglaze the pan with the beer, scraping up the little bits stuck to the bottom, and add the butter. Cook this pan sauce briefly, until it reduces a little and gets glossy, then pour over the wings.

Chili-Infused Vinegar

Add 1 tbsp. crushed chili/chili flakes and 1 tsp. salt to 1 cup white vinegar, and let sit. (You can obviously make more/less--just use the same ratio.)
